RECIPE PREPARATION Spinach dish with scrambled eggs:
Put a little water in the pot, always do so so as not to harden, because it is not a healthy habit, add oil, then chopped onion, crushed garlic, spinach and sauté for 5 minutes, add water and let the spinach simmer over low heat (attention boil quickly), when boiled, add the broth, salt to taste and ready. We take care of the eggs, prepare them and serve them with the spinach dish ... a treat!
Ingredients Transylvanian spinach soup:
- 600 grams of fresh spinach
- 80-100 grams of smoked bacon
- 1 small onion
- 2 cloves of garlic
- 1 teaspoon sweet pepper
- 2 whole eggs
- 1 yolk
- 1 bunch of fresh dill
- 200-250 grams of sour cream with a fat content of at least 25%, pepper
- vinegar for souring, to taste
Transylvanian spinach soup preparation:
Wash the spinach carefully, put it in a pot and add a teaspoon of grated salt. It does not need more water than what is left on the leaves to scald the spinach, simply cover the pot with the lid and put it on the fire for 4-5 minutes.
When the lid of the pot starts to & # 8222dance & # 8221, mix in the spinach once, then cover again. In a few minutes the spinach will be scalded and will lose much of its volume.
Drain the spinach (it will not have much liquid and will keep its color, by this boiling method) and cut it into small pieces. Let's brag about our banana cliché, fresh out of the smoker. It is as tasty as it looks and I assure you that, compared to the sausages available in the market, it is much healthier.
Cut the bacon into strips (julien).
Half of the bacon is browned in the pot in which the soup will be boiled.
Add the finely chopped onion and cook together (my onion was red, not mandatory).
As soon as the onion has softened, add the paprika, mix quickly and quench with hot water. Add the spinach.
Instead of water, the nun poured a mixture of sweet milk and sour milk, in which case some flour had to be added, so that the juice would not be chewed. I skipped the flour and implicitly the dairy mixture, but the soup tastes the same in the end.
Bring the soup to a boil, add a teaspoon of salt and let it sit for a few minutes. Meanwhile, two whole eggs (large to be, if not, put 3) are beaten with a fork together with 1 drop of salt, pepper to taste and half of the chopped dill. In a large frying pan, brown the remaining bacon, then pour the eggs and prepare a healthy gaigana (ie omelet).
Gaigana (omelette) browns nicely on both sides.
Remove the omelette on a plate and cut into pieces.
Add the pieces of omelette to the boiling soup and cook for another 3-4 minutes, then add the remaining chopped dill, turn off the heat and cover with a lid.
In a bowl, beat the cream with 2-3 tablespoons of cold water and the yolk. Add the chopped garlic and mix everything. Pour in the mixture of sour cream and yolk 1 polish of hot juice, mix and then pour into the pot with soup, stirring a few times and the soup is ready.
Spinach soup is eaten with great appetite, after each one adds it to the plate with a little vinegar (according to taste).

Low spinach ingredient:
- 400 g frozen spinach (previously boiled and finely chopped)
- 3 pieces of garlic
- 1 l milk
- 2 tablespoons sour cream
- 2 tablespoons flour

Method of preparation:
After the spinach has thawed, squeeze it a little with water and fry it together with the oil and crushed garlic.

SPINACH is not boiled in water because it loses its vitamins, but is boiled directly in the sauce (bechamel). It is much tastier and you do not have the feeling that you are eating boiled grass.

I do it without a hitch. I put the frozen spinach over a slightly hardened medium onion with two cloves of garlic. after it has opened, I leave it for another 2-3 minutes. and put a cube of butter, salt, pepper and dill (fresh or frozen) and another clove of finely chopped garlic. After approx. 2 min. with the lid on it I put a good handful of good quality parmesan, turn off the heat, mix well and leave it for another 2min. with the lid on or how long do the eggs separate. I have been cooking for some time and I have learned from my mother and grandmother that the worst thing in a meal is uncooked flour. So I looked for solutions to replace it and found that a little butter put in the last boils of food (or water from boiling potatoes or pasta) is healthier than rancid no matter how well done. At least for me and my family it's better. Good appetite!

Wash well, in several waters, the chosen spinach and put it to infuse in boiling water, slightly salted.
Drain and finely chop or pass it through a sieve, meat grinder or robot.
Separately, make a white sauce: boil 2/3 of the amount of milk and dilute the flour with the rest of the cold milk.
Add it to the boiling milk and stir continuously, over low heat, until it thickens and no longer has the specific taste of flour, then salt to taste. Remove from the heat and incorporate the butter.
Put the dish back on low heat, add the spinach puree, garlic, mix, season with salt and pepper to taste and simmer for a few minutes. If necessary, add a little of the water in which the spinach or milk was boiled.
Remove from the heat and keep warm.
Separately, fry the eggs in hot oil so that the egg white is set and the yolk is soft.
Serve while they are hot, portioning the spinach puree on a plate over which place 2 eggs, sprinkling on top, for taste and decoration, salt, freshly ground pepper or vegeta or paprika, according to taste and preference.
