  • 250 g digestive biscuits
  • 2 tablespoons cocoa
  • 100 g butter
  • Cream:
  • 500 g mascarpone
  • 200 ml liquid cream
  • 100 gr powdered sugar
  • 10 g granulated gelatin
  • 1 teaspoon vanilla extract
  • 100 gr dark chocolate + 100 ml liquid whipped cream
  • 200 g pitted cherries drained well
  • Jelly:
  • 200 gr cherries
  • 100 gr powdered sugar
  • 5 g gelatin

Preparation time: less than 60 minutes

RECIPE PREPARATION Cold dessert cheesecake with chocolate and cherries:


  • Grind the biscuits in a mini-robot, then add the cocoa and melted butter and mix a little until well incorporated

  • Prepare a cake form with 22 cm removable walls and line it with baking paper

  • Turn the biscuits over and press them well on the bottom of the form

  • Put the cake form in the fridge until you prepare the filling


  • Heat 100 ml of liquid cream and then place it over the broken chocolate, then mix the composition well and leave it to cool.

  • Hydrate the gelatin with 100 ml of cold water and then melt in a bain marie until it becomes liquid.

  • Mix the whipped cream with half the powdered sugar until it hardens a little.

  • Then add cold mascarpone, little by little and the rest of the powdered sugar. Mix until you get a homogeneous cream and add vanilla.

  • Lightly pour the gelatin into the cream and incorporate well.

  • Divide the cream into two bowls, a little more in one and put the melted chocolate in the bowl with less cream and mix easily.


  • Take the cookie sheet out of the fridge and pour the chocolate cream, then sprinkle with 200 g of cherries and put the white cream

  • Put the cheesecake in the fridge until you prepare the cherry jelly


  • Hydrate gelatin with 50 ml of cherry juice or water

  • Put the cherries in a saucepan and add the powdered sugar, then put everything on the fire and boil for a few minutes.

  • Mix everything with a vertical blender until you get a fine puree and add gelatin to the hot composition.

  • Mix well and leave it to cool a bit, then pour over the cheesecake and put back in the fridge for at least 4 hours
