Beat the egg whites well with a little salt, lemon juice and vanilla sugar and incorporate them into the chilled cream.

Garnish: brown leaf, 400 g plum jam, half vanilla cream, pandispan, the rest of the jam, the other half vanilla cream and the second brown leaf.

Cover with foil, place some weights on it and let it cool until the next day.

When the sheets have softened, pour the hot chocolate icing on top, which we make by mixing all the ingredients for the icing and boil them over a low heat, chewing continuously or on a steam bath.

Garnish with white and dark chocolate flakes.
