  • 50g (2 oz) butter
  • 2 onions, diced
  • 2 medium potatoes, chopped
  • 1 large carrot, diced
  • 1 celery stick, diced
  • 750ml (1 1/4 pt) chicken stock
  • salt and ground black pepper
  • 25g (1 oz) plain flour
  • 150ml (1/4 pt) milk
  • 175g (6 oz) cooked chicken
  • 300ml (1/2 pt) single cream
  • parsley leaves to garnish (optional)

  1. Melt the butter in a large pan and cook the onions, potatoes, carrot and celery gently for 5 minutes. Do not allow the vegetables to brown.
  2. Add the stock and simmer gently for 30 minutes. Season with salt and pepper to taste. Purée the soup in a food processor or blender until smooth and then return to the pan. Blend the flour with the milk and stir into the soup. Cook over a low heat, stirring, until the soup thickens.
  3. Meanwhile, chop the chicken finely. Add to the soup and heat through for 5 minutes. Add 4 to 5 tablespoons of the cream and simmer for 5 minutes more.
  4. Serve in individual bowls topped with a swirl of the remaining cream and garnish with ground black pepper and parsley leaves.

When I think of cream of chicken soup, I’m reminded of the Campbell’s condensed version my mom served us growing up. Loved it back then.

I even used it as a base in college for my mac and cheese dinners for an inexpensive culinary delight. As much as I enjoyed Campbell’s growing up, I think you will find this version a little different.

This is a great recipe to use up leftover roasted chicken that you may have in your refrigerator. Take the meat off the bones and use the carcass to make homemade chicken stock.

You can be elaborate and follow the recipe on the link or just boil the carcass for a quick and easy chicken stock that can be used in other recipes. I do this all the time especially when preparing risotto.

You can use this as a road map for making cream of chicken soup but don’t be shy from playing around with ingredients and come up with your own version. Change an herb, add another ingredient, have fun with it.

From the ingredients list, you can tell that there’s dairy in the form of butter and milk. However, if you want to make a dairy-free version, you can use oil for the butter and nut- or coconut-milk for the milk.

Obviously, you’ll have some flavor changes, depending on what substitutes you use, but the texture should be similar.

  • 2 cups chicken broth or chicken bone broth
  • 2 cups milk
  • 1/2 cup all-purpose flour

For the seasonings:

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried parsley


  1. In a medium saucepan, bring chicken broth or chicken bone broth to a boil over medium-high heat.
  2. In a separate medium mixing bowl, whisk together milk and flour until the flour is dissolved.
  3. Slowly add milk and flour mixture into the boiling broth, whisking constantly to combine.
  4. Reduce heat to medium. Add all seasonings and bring the mixture to a slow boil, continuously whisking. Let the mixture boil for 3 minutes or until thickened.
  5. Use in a recipe immediately or store in an airtight jar and refrigerate for up to a week.

2. If you’d like your cream of chicken soup thicker, add more flour. The soup will thicken even more after cooled.

How to make homemade cream of chicken soup mix without bouillon:

Another option is to leave the bouillon out of the cream of chicken soup mix! When you make your mix into the sauce or soup, add 1/3 cup of mix and use 1-1/4 cups of homemade stock, any flavor, or use something like Better Than Bouillon, as directed.

That way you can flavor it with whatever works best with what you are making, for example, vegetable, fish, beef, chicken, or pork dishes. And you can avoid ingredients in bouillon, if you want to.
