The fermented tea drink is kombucha faces a familiar problem as it mainstreams: it’s gaining attention from federal regulators. Kombucha is known to contain alcohol, but levels considered negligible until now. Attention is growing because fermentation can make kombucha too alcoholic to be sold as a non-alcoholic beverage, and because it’s grown into a $600 million dollar industry.
Big news in the world of restaurant culture! James Beard award-winning New York City restaurateur Danny Meyer announced plans to eliminate tipping at all Union Square Hospitality Group restaurants by the end of 2016. They’ll raise prices to increase employee salaries. It will be interesting to see if and how the non-tipping trend continues. The news comes a month after Top Chef judge and chef Tom Colicchio abolished tipping for lunch service at his flagship restaurant Craft.
Speaking of Tom Colicchio, on October 26, the tables will be turned on the imposing Top Chef judge during a roast by co-host Padma Lakshmi emceed by MSNBC’s Alex Wagner. There will be food from friends of the Chef Action Network, the non-profit that connects chefs with causes, and Food Policy Action, which was cofounded by Colicchio to show how state representatives vote on food issues. Proceeds will benefit both organizations.
